"Against Nature" by Joyce Carol Oates is a good non-fiction essay.

"The Way to Rainy Mountain" by N. Scott Momaday

"Into Thin Air" and "Into the Wild" John Krakauer

I guess those can be considered outside of 'nature' writing but I think they're heavily influenced by nature, of course.

I know I don't really read it. My interest in it is somewhat nonexistent. And Krakauer is pretty good at it.
